Midweek Snack // Saffron Cauliflower Rice

Also known as vegetable biryani, one of my most favorite Indian side dishes of all time. Between biryani and chinese fried rice, I could just OD on rice, but it doesn't quite fit in with my health goals. Do I deprive myself? Absolutely not, just have to find a suitable way around it! It's too easy and too delicious to make this with cauliflower rice that you should never even have to have any guilt over it ever again. Or, purchase rice ever again, for that matter.

Cauliflower is not the greatest tasting raw vegetable of all time, but it has a unique characteristic that allows it to easily take on the flavor of whatever you are cooking it with or spicing it with. That makes it the perfect nutrient dense candidate to substitute for a high carbohydrate, nutrient lacking food such as rice. As with all recipes, I am constantly seeking out the "easier way" to do anything, which includes at times, the purchase of pre-prepared or frozen items even at higher cost, just to encourage good habits with convenience. If you prioritize saving money, then spending the extra time to prep items yourself will definitely achieve that. If you prioritize time, then spending extra won't bother you so much. I have found pre-riced cauliflower at Wegmans before, the price is usually too much for me to justify. But recently, G came across pre-riced frozen cauliflower at Trader Joe's on the cheap!! I love that it's frozen because it can be bought any time and kept frozen until needed, it was flash frozen right after ricing so the quality of the vegetable is still intact, and there is no need to dethaw it prior to throwing it into your dish. Voila!

In that vein, I have also made this Saffron Cauliflower Rice dish many times in the past with Danielle Walker's Chicken Tikka Masala, and it was absolutely delicious. Her recipe is linked directly, if you care to make it! Since making this dish, I have found a great super-easy substitute at Costco - Sukhi's All Natural Tandoori Spiced Chicken. The brand also carries a saucier version of Chicken Tikka Masala. I have used both in the recipe and they are equally delicious! I just prefer less sauce. My only beef with this product is that it's not organic chicken. But, I'm choosing my battles. On a super busy week, when I need to throw it together and keep my diet clean, I am making specific choices for convenience. Anyways, check out these ingredients and nutrition facts! Winning!!!
