Bacon In the Oven (a la Martha Stewart) Two ways

  • Strips : The classic bacon style. On a large cookie sheet, line the bottom with parchment paper and lay individual bacon strips flat on the parchment so that they are not touching each other. They can be close, but not overlapping. Bake at 400 degrees for ~15 minutes. Check on how done they are, if you have a lot it might need longer, especially if it's thick cut.

  • Basket Weave : This is a great way to cook bacon so that you have a nice flat sheet of it, that won't dislodge itself from your sandwich, and I sometimes like to use them as bread "ends". 3 strips of bacon will make 1 basket. Cut all 3 strips in half, and weave them together into a square. Line the bottom of a large cookie sheet with parchment paper lay individual baskets flat on the parchment so they are not touching other baskets. Bake at 400 degrees for ~15-20 minutes. It will take a bit longer than strips because there is more volume in one place.

Tips

  • You can also put the baskets over an upside down muffin tin, so that they make little bacon "cups"

  • If you're into more crispy bacon, strain most of the grease out after the first 12-15 minutes, flip the bacon and continue cooking on the more dried-out baking sheet

  • Don't throw away your bacon grease!!! Pour it into a small mason jar and keep it for cooking. And, at our house we'll mix a tsp in with Levi's dog food. He is crazy for this, of course.

Storage

  • The bacon grease in a small bell jar, in fridge

  • Individual strips: I place 2 together and wrap in tin foil, in fridge

  • Baskets/Cups: Individually wrapped in tin foil, in fridge
