Midweek Snack // Blueberry Almond Bars & Candied Bacon

I made both of these delicious, easy recipes recently for a baby shower that I threw for a great friend of mine in RPM class (cycle). Both are paleo recipes and therefore gluten and dairy free. And they were a HIT! I served them with some Starbucks coffee with coconut creamer, and Trader Joe's Berry Lemonade with fresh raspberries. I think either, or both, of these items are great ideas to take to pot-luck brunch, or to have when hosting a brunch. Enjoy!!
Blueberry Almond Bars
+Line 8x8 pan with parchment paper
+Preheat oven to 350
+Combine Wet Ingredients:
1/4 cup coconut oil, melted
1/3 cup almond butter
1/4 cup honey
1 tsp vanilla
1/2 tsp sea salt
1 egg
+Combine Dry Ingredients:
1/2 tsp baking soda
2 cups almond flour
2 tbsp coconut flour
+Add dry ingredients into wet ingredients, mix well
+Spread mixture into the pan, press to smooth. Top with blueberries (approx. 1 pint) - press into the dough
+Bake at 350 for 25 minutes. Let cool completely in the refrigerator before serving. Makes 16 bars.
Candied Bacon
Per 1lb Thick cut bacon
+Combine ¼ cup maple syrup with ¼ cup coconut sugar
+Line baking sheet with parchment paper, line up bacon in a single layer
+Use basting brush to coat the top of each piece
+Bake at 350 degrees for 25-30 minutes. Bacon should be *almost crispy, remove from oil pooled in the pan to cool on a wire rack where it will continue to harden.
